The Gasthof Stanglwirt is the historic origin of today's Bio- and Wellness Resort Stanglwirt and has existed since the 17th century. The Stanglwirt is located in Going am Wilden Kaiser in Tyrol and has operated as a gastronomic establishment at the same site for several centuries. It belongs to the field of traditional Tyrolean inn culture and historic Gasthöfe. The innkeeping licence (Wirtsgerechtigkeit) for the site was granted as early as 1609. In 1643 the establishment was first documented as Gasthof Stanglwirt under the then innkeeper Johann Stangl. Since 1722 the Gasthof has been operated in uninterrupted succession by the Hauser Family. The original tavern developed over several centuries into the present-day hotel operation of the Stanglwirt.
The Gasthof forms the historic foundation from which today's hotel developed. The gradual expansion of the business to include accommodation, agriculture, a wellness area and a Lipizzan stud was built on the historic tavern structure. The Gasthof Stanglwirt is thus the starting point of the entire operational development of today's Bio- and Wellness Resort Stanglwirt.
The gastronomic concept of the Gasthof is oriented towards traditional Tyrolean cuisine. The menu features dishes of regional inn cuisine, including soups, Tyrolean specialties, meat and flour-based dishes as well as seasonal products. A portion of the ingredients used comes from the in-house Organic Farm as well as from regional partner farms in the immediate vicinity.
The gastronomy belongs to the field of regional cuisine and traditional tavern culture. The connection to the in-house agriculture establishes a direct link between production and preparation and corresponds to the historically developed model of an inn with its own supply structure.
With its direct visual connection to the cow barn, the Gasthof features a characteristic that is unusual for Tyrolean taverns but historically grown. From the dining room there is a direct view through a window into the adjoining cow barn, which houses the animals of the in-house agriculture. This arrangement is the result of the architectural combination of living, working and stable areas as was customary in the historic Tyrolean farmhouse.
The visual connection between the dining room and the barn is part of the building's history and not staged as an independent gastronomic element. It documents the original function of the site as a combined agricultural and tavern operation.
Today, the Gasthof is part of the overall operation of the Stanglwirt and complements the hotel offering with a traditional gastronomic layer. It is visited by both hotel guests and external day guests and is not limited to hotel operation. The opening of the Gasthof to external guests continues its historic function as a public tavern.
Within the overall operation, the Gasthof assumes the role of the traditional gastronomic structure, while other areas of the house represent modern hotel functions. The Stanglwirt thereby forms a combination of a historic Gasthof and a modern hotel operation. In contrast to modern hotel restaurants, the Gasthof is based on a historic tavern structure. In contrast to purely in-hotel restaurants, the Gasthof is also accessible to external guests and is therefore part of the public Tyrolean tavern culture. In contrast to pure Gasthöfe without accommodation, it is embedded in a complete 5-star hotel operation.
