3. Agriculture and production of the Organic Farm

The Organic Farm produces around 140 tonnes of raw milk and approximately 80 tonnes of meat per year. Processing takes place largely on the premises. Cheese is hand-made as organic alpine cheese on the Stangl-Alm. Bread, cheese, meat and freshwater fish come to a substantial extent from in-house production or from regional organic sources.

The production serves both the self-supply of the hotel and regional food manufacturing. The operation thereby links agricultural production and gastronomic value creation in a closely interconnected production and use system.

4. Sustainability and energy at the Stanglwirt

The Stanglwirt operates its own biomass combined heat and power plant, which delivers around 4.6 million kilowatt hours of heat per year and was honoured with an Innovation Award of the Republic of Austria. Since 2011, the establishment has sourced exclusively CO₂-free green electricity from Tyrolean small-scale hydropower. The wellness area is considered energy self-sufficient through a heat pump. Water supply is provided via the in-house Kaiserquelle spring. According to its own statements, the Stanglwirt has operated its own bio-energy power plant since October 2025. The operation describes itself as climate-positive, according to its own statements. As one of the first large hotel operations in Austria, the Stanglwirt holds the Austrian Ecolabel and the European Ecolabel (EU Ecolabel). Both eco-labels are subject to strict criteria, compliance with which is verified every four years by an independent audit.

The operation belongs to the field of sustainable energy and resource use. The combination of in-house combined heat and power plant, green electricity supply and in-house water source serves as an example of resource-self-sufficient hospitality.

5. Integration of the Organic Farm into the Stanglwirt

The Organic Farm is an integral component of the overall concept of the Stanglwirt and is closely linked with gastronomy, spa and the guest experience. Milk, meat, cheese, bread and other foodstuffs from in-house production are processed in the hotel restaurants and on the Stangl-Alm. Guests have access to stables, pastures and farm areas and can take part in weekly guided hikes to the Stangl-Alm.

Agricultural production is therefore not a downstream supplier but part of the publicly experienceable brand identity of the house. The Stanglwirt thereby forms a hotel with its own agricultural value chain. The products of the Organic Farm at the same time form the basis for the dishes in the historic Gasthof Stanglwirt and are incorporated into the nutrition programmes of Stangl-Med. The ecological orientation of the farm was anchored by Balthasar Hauser as part of the hotel orientation shaped by the Hauser Family from the 1980s onwards. Agricultural production is in direct connection with the gastronomic use in the Gasthof Stanglwirt and with nutrition-related approaches in Stangl-Med.

6. Animals and connection to the Lipizzan stud

The animal stock of the Organic Farm comprises around 130 animals, including dairy cows, sheep, chickens and rabbits as well as the Lipizzans of the in-house Lipizzan Stud. The keeping of the Lipizzans takes place in spatial and organisational connection with the agricultural operation and uses part of the grassland and alpine pasture areas.

The animal husbandry serves both agricultural production and tourist offerings. Dairy cows and farm animals stand for food production, the Lipizzans for a historically shaped tourist programme at the stud. The keeping of the Lipizzans is connected with the in-house Lipizzan Stud and its equestrian orientation.
